2 sticks room temp butter
2 tablespoons each chopped fresh rosemary, sage, and thyme
Coarse salt and ground pepper (I grind my own)
Pull your turkey skin away from the breast meat, smear half the butter mixture UNDER the skin…..then lay bay leaves on-top of the breast meat, under the skin.
Spread remaining herb butter mixture on top of your turkey skin.
Then, I stuff my turkey with:
2 to 3 large carrots, halved crosswise
2 large onions, cut into 8 wedges
2 stalks celery, halved crosswise
Add more carrots, onions and celery to the bottom of your turkey roasting pan, along with some vegetable stock. This is the juicy yumminess you will baste your turkey with as Tom cooks. =D
