Apple Pie Bread

A warm, delicious quick bread using one of my favorite fruits…. apples! This is an Autumn “must bake”!

Apple Pie Bread
Serves 8
Served warm, this bread is incredible! It's like a cake and pie in one! Served cold, with cold butter spread on top and a warm cup of coffee is also delicious!

  1. 1/2 tsp cinnamon
  2. 1 cup brown sugar
  3. 1/3 cup white sugar
  4. 1/2 cup butter, softened
  5. 2 eggs
  6. 1 1/2 tsp vanilla
  7. 1 1/2 cups all-purpose flour
  8. 2 tsp baking powder
  9. 1/3 cup milk
  10. 2-3 apples (2 large or 3 small) peeled and chopped into bite-sized pieces
  11. 1 tbs melted butter
  1. Preheat oven to 350 degrees.
  2. COMBINE IN A SMALL BOWL: 1/3 of the brown sugar (packed) and 1/2 tsp of cinnamon. Mix well.
  3. MIX IN MIXING BOWL (I used my Kitchenaid Stand Mixer): remaining 2/3 brown sugar and white sugar and cream it together with the 1/2 cup softened butter until fluffy and light.
  4. ADD: Both eggs (1 at a time)
  5. ADD: vanilla
  6. ADD: flour and baking powder
  7. ADD: milk
  8. Beat together well, but do NOT over mix.
  9. POUR: half the mixture into a well greased and floured bread loaf pan.
  10. ADD: half the amount of chopped apples and lightly place them on the top of batter.
  11. SPRINKLE: half of the brown sugar and cinnamon crumble on top of apples.
  12. MIX: Now, dump the rest of your chopped apples into the remaining batter and fold apples in until well coated.
  13. ADD: add the remaining apple batter on top.
  14. ADD: top he batter with the remaining brown sugar/cinnamon crumble.
  15. BAKE: 40 minutes.
  16. TOP: brush 1 tbs of melted butter on top of the bread using a pastry brush and then let it bake in the oven for another 10 minutes until golden brown.
  17. REMOVE read from oven. Allow it to cool 10-15 minutes before removing from bread loaf pan.

Blueberry Steusel Cake


Streusel Topping:

* 1/3 cup AP Flour

* 1/3 cup sugar

* 1/2 tsp cinnamon

* 1/4 cup COLD butter (or 1/2 stick)

Whisk together dry ingredients. Add the cold butter, making sure you cut it into little cubes and cut butter into flour mixture using a pastry cutter or using 2 butter knives.

Set topping aside.

* 1/4 cup butter

*1/2 cup sugar

* 1 large egg

* 1/2 tsp vanilla

* 1/3 cup milk

* 1 cup AP flour

* 1 tsp baking powder

* 1/4 tsp salt

Use paddle attachment on stand mixer.

Beat butter until fluffy.

Add sugar and beat again until butter and sugar mixtur become light and fluffy. This may take a few minutes.

Add your egg and vanilla. Beat.


In a separate bowl, add your dry ingredients…. flour, baking powder and salt. Mix together well using whisk.


Alternating milk and dry mix….. add to the bowl on your stand mixture with your butter/sugar mixture. I add dry, milk, dry, milk, dry…. in that order and then beat until all of it is well blended and fluffy.


Add to an 8×8 greased dish or pan.

Top cake mixture with 2 cups of fresh blueberries.

Then, top blueberries with streusel topping.

Bake in a 350 degree oven for 50-60 min.

Remove from oven and allow to cool. This can be served warm, room temp or cold out of the fridge. ENJOY! 😀
