Ingredients
  1. 1 TBS instant yeast
  2. 1/2 cup warm water
  3. 1/2 cup sugar
  4. 1/4 cup honey
  5. 2 cups warm milk
  6. 6 TBS melted butter (warm not hot)
  7. 2 tsp salt
  8. 2 eggs
  9. 8 cups flour (with 1 extra cup handy in case your dough is still too wet)
Honey Cinnamon Butter
  1. 1/2 cup softened butter
  2. 1/3 cup powdered sugar
  3. 1 tsp cinnamon
  4. 3 TBS honey
  5. Mix in stand mixer or using hand mixer until well mixed and fluffy.
  6. Chill and serve with warm rolls.
Instructions
  1. Add yeast, warm water, sugar and honey in your stand mixing bowl.
  2. Then add milk, butter, eggs, and salt.
  3. Add 1-2 cups flour and mix using paddle attachment until consistency of pancake batter.
  4. Change out paddle for dough hook.
  5. Slowly add remaining cups of flour, totaling 8 cups until a soft dough ball forms.
  6. Knead 5 minutes.
  7. Remove from mixing bowl.
  8. Place on a floured board or surface.
  9. Allow dough ball to stand and rest 10 minutes.
  10. Place dough ball in a greased/oiled bowl, cover and allow to rise 1 hour- 1 1/2 hours until doubled in size.
  11. Punch dough down and remove dough ball from bowl.
  12. Place onto floured surface and roll out.
  13. Slice into square rolls.
  14. Place onto oiled cookie sheet.
  15. Cover and allow to rise a second time for 1 hour.
  16. Place baking sheet in a 350 oven and bake 10-15 minutes until golden brown.
  17. Remove from oven and baste with melted butter.
  18. Serve warm with Honey Cinnamon Butter.

Base
  1. 3 cups flour
  2. 1/4 teaspoon salt
  3. 1 cup sugar
  4. 4 teaspoons baking powder
  5. 1 1/2 cups milk
  6. 2 eggs
  7. 2 teaspoons vanilla
  8. 1/2 cup butter, melted
Topping
  1. 1 cup butter, softened
  2. 1 cup brown sugar
  3. 2 tablespoons flour
  4. 1 tablespoon cinnamon
Cream Cheese Frosting (rather than Glaze) This is a copy-cat Cinnabon Frosting Recipe
  1. 2 packages of cream cheese
  2. 1 stick of soft butter
  3. 3 1/2 cups powdered sugar
  4. 2 tsp vanilla extract!
  5. Just beat it together. PERFECTION!
Instructions
  1. Preheat oven to 350F.
  2. Grease a 9 x 13 baking pan with cold butter and set aside.
  3. Mix all of the base ingredients together, with the exception of the butter.
  4. Add the melted butter last, and then pour into your prepared pan.
  5. Mix all of the topping ingredients together in a separate bowl.
  6. Mix/Blend well using fork or whisk.
  7. Drop by teaspoonful over the base, as evenly as you can over the entire cake base.
  8. Take a butter knife and swirl the topping into the base.
  9. Pop into the oven and bake for 30-50 minutes. (Mine took 50 minutes.... keep checking every 5 minutes using a toothpick in the center of cake until it comes out clean).
  10. While the cake is baking, prepare the cream cheese frosting and set aside in fridge to keep chilled.
  11. Remove from oven and allow to cool.
  12. Add Cream Cheese Frosting to the cake while still slightly warm.
  13. Serve and ENJOY!

FOR THE FRENCH TOAST
  1. 1 loaf of good, crusty bread. I used Honey Whole Wheat.
  2. 8 whole Eggs
  3. 2 cups Whole Milk
  4. 1/2 cup Half and Half or Cream
  5. 3/4 cups Sugar
  6. 2 Tablespoons Vanilla Extract
FOR THE TOPPING
  1. 1/2 cup All-purpose Flour
  2. 1/2 cup Firmly Packed Brown Sugar
  3. 1 teaspoon Cinnamon
  4. 1/4 teaspoon Salt
  5. 1 pinch Nutmeg
  6. 1 stick Cold Butter, Cut Into Pieces
  7. 1/2 cup oats
  8. 1 quart jar of home canned apples OR use fresh or pre-canned apples/apple pie filling
Instructions
  1. Preheat oven to 350 F.
  2. Grease a 9 x 13-inch baking pan with butter or spray.
  3. Cut or tear bread into 1 inch cubes and evenly place them in your dish.
  4. In a bowl mix together eggs, milk, cream, sugar, and vanilla.
  5. Pour evenly over the bread, slowly.
  6. Gently place apples evenly throughout the chunks of bread.
  7. In a separate bowl mix flour, brown sugar, cinnamon, nutmeg, oats and salt.
  8. Add slicked butter cubes and cut them into the dry mixture using pastry cutter until mixture resembles wet sand.
  9. Bake for 45 minutes for a softer, more bread pudding texture.
  10. Bake 1 hour or more for a firmer, less liquid texture. (I baked mine for 1 hour)
  11. Scoop and serve with butter and a drizzle with maple syrup.

Ingredients
  1. 7-8 pounds pears, peeled, cored & halved
  2. 1/2 cup lemon juice
  3. 4 cups granulated sugar
  4. 1/4 cup ground cinnamon
  5. 1 tsp-1 tbs ground nutmeg (adjust to your liking)
Instructions
  1. Peel, core and slice up pears.
  2. Place them into a crock pot or slow cooker.
  3. Set on LOW.
  4. Add cinnamon and nutmeg.
  5. Allow to cook on low for 6-7 hours.
  6. Mash fruit with hand masher or cordless immersion blender. If you like it chunky, use the hand potato masher like I did.
  7. Add sugar.
  8. Allow to cook down and thicken, another 6-7 hours.
  9. Fill clean and sterile mason half pint jars.
  10. Process in a water bath canner 15 minutes OR you may jar this up and keep it in your fridge (if you do not can) and it will stay good for up to 3 months.

Ingredients
  1. 1/2 tsp cinnamon
  2. 1 cup brown sugar
  3. 1/3 cup white sugar
  4. 1/2 cup butter, softened
  5. 2 eggs
  6. 1 1/2 tsp vanilla
  7. 1 1/2 cups all-purpose flour
  8. 2 tsp baking powder
  9. 1/3 cup milk
  10. 2-3 apples (2 large or 3 small) peeled and chopped into bite-sized pieces
  11. 1 tbs melted butter
Instructions
  1. Preheat oven to 350 degrees.
  2. COMBINE IN A SMALL BOWL: 1/3 of the brown sugar (packed) and 1/2 tsp of cinnamon. Mix well.
  3. MIX IN MIXING BOWL (I used my Kitchenaid Stand Mixer): remaining 2/3 brown sugar and white sugar and cream it together with the 1/2 cup softened butter until fluffy and light.
  4. ADD: Both eggs (1 at a time)
  5. ADD: vanilla
  6. ADD: flour and baking powder
  7. ADD: milk
  8. Beat together well, but do NOT over mix.
  9. POUR: half the mixture into a well greased and floured bread loaf pan.
  10. ADD: half the amount of chopped apples and lightly place them on the top of batter.
  11. SPRINKLE: half of the brown sugar and cinnamon crumble on top of apples.
  12. MIX: Now, dump the rest of your chopped apples into the remaining batter and fold apples in until well coated.
  13. ADD: add the remaining apple batter on top.
  14. ADD: top he batter with the remaining brown sugar/cinnamon crumble.
  15. BAKE: 40 minutes.
  16. TOP: brush 1 tbs of melted butter on top of the bread using a pastry brush and then let it bake in the oven for another 10 minutes until golden brown.
  17. REMOVE read from oven. Allow it to cool 10-15 minutes before removing from bread loaf pan.
  18. ENJOY!

Cinnamon Buns

Cinnamon Buns:
Use any basic white bread recipe.

Basic white bread recipe:
3/4 cup warm water
2 tsp instant yeast
1 tsp salt
1 tbs sugar
1 tbs butter
1/2 cup warm water + 2 tbs milk powder or 1/2 cup warm milk
3 cups all-purpose flour (approx)
In medium bowl mix yeast sugar and warm water. Allow to proof. (Wait 5 minutes if using traditional yeast or just mix if using instant)
Add salt veg oil and warm milk.
Stir
Add 2 cups of flour. Dough should be quite sticky. Stir until well mixed.
Now add flour 1/4 cup at time and stir until to stiff to stir.
Turn out onto floured board or counter.
Knead. Need until no longer sticky and dough is smooth.

Rise 1 hour.


After first rise roll out with rolling pin to 1/4 inch thickness. Should be about 9×13.
Coat with thin layer of butter
Sprinkle with thick layer of brown sugar.
Sprinkle with generous amount of cinnamon.
Roll starting at long end.
Should have a 13 inch long roll.
Cut into 12 equal slices.
In a sauce pan melt .5 cup butter and .5 cup brown sugar.
Pour into 9×13 pan.
Place rolls spiral side down into pan on top of caramel mixture in 3×4 pattern.
Allow to rise 30 minutes.
Bake at 375 for 30 minutes.
Allow to cool only 5 minutes.
Flip onto plate on cookie sheet covered in tinfoil. Do not wait longer or caramel sauce may harden and prevent bun removal.Cinnamon Buns
