Cream Cheese Chocolate Chip Cookies

1/2 cup (1 stick) unsalted butter, softened
1/4 cup cream cheese, softened (use cream cheese in a block or spreadable, don’t use fat-free, light or whipped)
3/4 cup light brown sugar, packed
1/4 cup granulated sugar
1 large egg
2 teaspoons vanilla extract
2 1/4 cups all-purpose flour
2 teaspoons cornstarch
1 teaspoon baking soda
pinch salt
2 1/2 cups semi-sweet chocolate chips

In your stand mixer  with the paddle attachment, combine: butter, cream cheese, sugars, egg, vanilla, and beat on level 4-5 speed until well-creamed, light and fluffy, about 5 minutes.
Scrape down the sides of the bowl.

Add: flour, cornstarch, baking soda, salt, and mix until you get it all combined.
Add chocolate chips, and mix lightly using the stand mixer OR fold in by hand using spatula.
Using a cookie spoon, make 2 inch balls on a well greased cookie sheet. Flatten with your hand and place in the fridge for an hour to get cold.
Preheat oven to 350F

Bake for 8 to 10 minutes, or until edges have set….. but not longer than 10 minutes. Leave cookies on the baking sheet for 5 minutes after baking, where they will continue to bake. Then set on a cookie rack to finish cooling.

The Kneady Homesteader’s Dark Fudgy Brownies

The Kneady Homesteader’s Dark Fudgy Brownies:
1 cup butter
1 cup cocoa
2 cups granulated sugar
4 eggs
2 tsp vanilla
1 1/2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 1/2 cups chocolate chips

Preheat oven to 350 degree’s.
Melt butter (on stove top or microwave)
Add butter to mixing bowl (stand mixer or bowl to mix by hand)
add cocoa powder.
Mix both together well.
Mix well.

eggs. Mix.

baking soda
Mix well.
Add 1 cup chocolate chips.
Mix well.
Add remaining half cup of chocolate chips, sprinkled on top.

Place in a Pyrex dish or pan. I covered mine with parchment paper, and placed brownie mix ontop of the paper, making lifting it from my pyrex dish a breeze! this way you can lift it to cool completely, and cut it up with no mess!
Back at 350 for sppx 30 min. Check center with toothpick and watch the sides…. once they start to crinkle and cook, it’s done. Remove from oven, allow to cool 15 minutes. lift parchment paper out and place on cooling rack to continue to cool. Slice, sprinkle with powdered sugar and serve. Or serve it with ice cream. YUM!!!!

Peanut Butter and Chocolate Chip Cookies

This recipe was created with my husband in mind. A TRUE Peanut Butter and Chocolate Chip fan! haha I hope you guys enjoy it!

Peanut Butter and Chocolate Chip Cookies
(Makes Approx. 4 dozen cookies)

1 cup butter (2 sticks)
1 cup sugar
1 cup brown sugar
2 eggs
1 tsp vanilla
2 1/2 cups flour
1 tsp baking powder
1 cup peanut butter
1 cup chocolate chips
* 1 tsp salt IF you are using unsalted butter only

Cream butter into both sugars.
Add vanilla and eggs, mix well.
Add peanut butter, mix well.
Add baking powder, mix well (and salt if using unsalted butter)
Add flour, mix well.
Mix in chocolate chips.

drop by teaspoon onto cookie sheet. press in center with fork, criss-cross marks. (this keeps the middle from rising ensuring cookie bakes evenly)

Bake at 350 for 8 minutes ONLY. remove from over. drop cookie sheet onto counter to ensure if cookie rises at all, it will fall/drop in the center.

Allow to cool and place onto plate. Enjoy!chocolate chip peanut butter cookies

Simple Chocolate Chip Cookies

Chocolate chip cookies:
1 cup butter
3/4 cup brown sugar
3/4 cup white sugar
2 eggs
1 tsp vanilla
2 1/4 cup flour
1 tsp baking soda
3/4 salt (if used unsalted butter, if not omit)
1 cup chocolate chips

Cream sugars and butter
Add eggs and vanilla, stir
Add rest of dry ingredients, stir
Add chocolate chips, stir

Bake 350 for EXACTLY 8 minutes. You will think they are not done, TAKE THEM OUT!

Allow to cool on sheet.
