  1. 1 1/2 cups warm water
  2. 1 tbs instant yeast
  3. 2 tsp salt
  4. 2 tbs sugar
  5. 2 tbs butter
  6. 1 cup warm water + 4 tbs milk powder or 1/2 cup warm milk
  7. 6 cups flour (approx)
  1. This is a double batch recipe. If you only need 4 rolls, cut this recipe in half.
  2. Mix ingredients in stand mixer.
  3. Knead 7 minutes.
  4. Shape dough in ball.
  5. Place dough ball into a greased bowl.
  6. Cover with plastic wrap or tea towel.
  7. Let rise 1 hour.
  8. Punch dough down, remove air pockets.
  9. Shape into log.
  10. Cut into 8 even pieces.
  11. Shape into long rolls.
  12. Place on greased cookie sheet.
  13. Cover and let rise 30 min.
  14. Baste with egg wash.
  15. Add sesame seeds.
  16. Bake 375 for 35-40 minutes or until golden brown.
  17. Allow to cool on pan for 10 min.
  18. Remove onto a wire rack to cool.

Noreen’s Kitchen Soft Hamburger/Hot Dog Buns

This recipe makes the softest, most perfect hamburger bun! The dough is a bit stickier, and it has a much longer rise time…. 90 min 1st rise with a 60 min second rise, but oh so worth the long wait! It made the most delicious and perfect buns last night for dinner with my homemade sloppy joe’s!

1 cup warm water
1/4 cup sugar
1 tbs yeast (instant)
1 egg
(beat together then add:)
3 cups flour (i used bread flour) and have 1 additional cup of flour on the side, in case your dough is too wet, mine was perfect.
3 tbs soft butter
1 tsp salt

knead 5-7 min….. rise 90 min…. then punch down dough, log it, cut it into 8-12 buns depending on how large you want your hamburger buns (i made 8 and kept mine large) flatten with your hand, place on greased pan, spray tops, 2n rise 60 min, apply melted butter to tops, bake at 350 for 15-17 min (mine took 15 min), then while hot, apply 2nd coat of melted butter to tops. So SOFT! ENJOY!!!!

Cinnamon Buns

Cinnamon Buns:
Use any basic white bread recipe.

Basic white bread recipe:
3/4 cup warm water
2 tsp instant yeast
1 tsp salt
1 tbs sugar
1 tbs butter
1/2 cup warm water + 2 tbs milk powder or 1/2 cup warm milk
3 cups all-purpose flour (approx)
In medium bowl mix yeast sugar and warm water. Allow to proof. (Wait 5 minutes if using traditional yeast or just mix if using instant)
Add salt veg oil and warm milk.
Add 2 cups of flour. Dough should be quite sticky. Stir until well mixed.
Now add flour 1/4 cup at time and stir until to stiff to stir.
Turn out onto floured board or counter.
Knead. Need until no longer sticky and dough is smooth.

Rise 1 hour.

After first rise roll out with rolling pin to 1/4 inch thickness. Should be about 9×13.
Coat with thin layer of butter
Sprinkle with thick layer of brown sugar.
Sprinkle with generous amount of cinnamon.
Roll starting at long end.
Should have a 13 inch long roll.
Cut into 12 equal slices.
In a sauce pan melt .5 cup butter and .5 cup brown sugar.
Pour into 9×13 pan.
Place rolls spiral side down into pan on top of caramel mixture in 3×4 pattern.
Allow to rise 30 minutes.
Bake at 375 for 30 minutes.
Allow to cool only 5 minutes.
Flip onto plate on cookie sheet covered in tinfoil. Do not wait longer or caramel sauce may harden and prevent bun removal.Cinnamon Buns
