Cast Iron Skillet Corn Bread
2 1/2 cups corn meal
1 1/2 cups all purpose flour
2/3 cups granulated sugar
2 tsp salt
4 tsp baking powder
1 tsp baking soda
2/3 cup milk
2 cups buttermilk OR sour milk
4 eggs
2 sticks soft butter

(Sour Milk: 1 cup milk and 1 tablespoon vinegar or lemon juice. Allow to sit 5 minutes to sour)

Heat cast iron skillet in a 425 degree oven for 30 minutes.
While doing that prepare mix:
add all ingredients, mix well by hand or using paddle of your stand mixer on setting speed 1-2.
After 30 min, reduce oven to 375…. carefully remove HOT cast iron pan, add mix to it and place back into the oven to cook for 20-25 minutes.

I added sliced hot dogs to my mix, making it a complete meal. Just another idea. When finished, I added pats of butter to the top, and spreading it over the top crust of the corn bread. I sliced it and served it with drizzled honey.
